Our third selection of Colombia - after weeks of test roasting and cupping, finally we nailed it. 

The beans smells obviously nutty. The dry grinds resemble mixed spice aroma, with slight tone of black pepper and even red chilly powder. If you let the dry grinds sit a few more minutes, you will get roasted chestnut aroma.

With such spicy dry fragrance, you would think the taste would be as spicy - surprisingly, the brew came out very very smooth and balanced. It taste sweet too, which reminds me of cashew nut. 

This roast preserves the precious acidity of the beans. Depends on how you brew it, you can really twist it to match your own preferences. A shorter brew (2 minutes) will exhibit Kenya like bright acidity, while a longer brew (20 more seconds) would almost mute the acidity and turn it to a complete sweet cup. The timing is based on Hario V60. You can adjust it based on your brew method.
