Long waited Yemen Mocca Sanani. With the civil war going on for years, Yemen coffee has been so hard to get. And now we are thrilled to offer this new season harvest from Yemen. 

The coffee beans came from the mountain area surround Sana'a, the capital of Yemen. The altitude is incredibly high, at 2000 to 2500 meters above sea level. We have sample-roasted and cupped quite a few coffee from Yemen over the past years, and so far we found the Mocca Sanani from Ali Hiba Muslot & Sons and at this altitude offers the best flavor complexity and cleanness. 

A versatile coffee, equally enjoyable as black pour over coffee, black espresso or latte. I would expect it to go well with Moka Pot and French Press. 

This coffee is fragrant. The dry grinds has strong spice aroma, at beginning smells like pork stew; wait a little bit, a smoky sweetness prevails; as time goes by, the aroma lightened - sweet herbal even floral notes shows up.

For Pour Over Coffee

The wet coffee aroma reminded me vanilla and roasted chestnut. At first sip, it fells silky smooth. Its sweetness resembles logan and jujube tea - sweet and moist. The acidity is almost muted - not perceivable at all. The sweetness and smoothness are through and through from hot, to warm and to cold.

With a long sweet finish, syrupy mouthfeel, this coffee is very enjoyable at any time of the day.

Recommend to brew at a higher temperature, for example 202F at a brew ratio of 1:13, and a longer brew time. 

To bright out the dark chocolate side of this coffee, try raising the water temperature to 212F. It would result an intensely sweet cup with dark cocoa accent.

For Espress and Latte

This Yemen exhibits its slightly rustic side in espresso and latte, with obvious dark chocolate flavor that you won't miss. It's intensely sweet as well, complex and big body.

由於內戰不斷,近年來,高品質的也門咖啡是一豆難求啊!終於等來了享譽盛名的也門薩納尼咖啡豆,而且是當季的新收成,幾週前才剛飄洋過海運到美國。

這支也門咖啡豆產自也門首都薩納周圍的特高海拔山區,距離海平線2000到2500米。在過去的幾年里,我們試驗和杯測了好幾支也門的咖啡豆,發現還是來自Ali Hiba Muslot & Sons的特高海拔Mocca Sanani口感和風味複雜度最佳。

這支咖啡豆怎麼煮怎麼好喝。我們試過手沖黑咖啡,Espresso濃縮黑咖啡,和拿鐵咖啡,味道都很好。我們相信,用Moka Pot 或者法壓壺,應該也錯不了。

香氣撲鼻。當你研磨咖啡的時候,首先聞到的是像紅燒肉一般,類似五香大料的香料氣息;之後帶著煙燻的甜香傳來;再等一會兒,香氣轉清淡,能聞出草本甚至幽微的花香。

做手沖咖啡時,咖啡的香氣里帶著香草的甜度,還有點像糖炒栗子。喝第一口,感覺如絲般順滑;像陶盅里慢火久燉的龍眼紅棗茶,甜甜滋潤。基本沒什麼酸度。從熱喝到涼,那種絲滑和甜美的味道一直保持。那種甜美的味道久久繞舌不散。

建議水溫稍高,比如202F;咖啡和水的比例建議 1:13.

如果你想要感受純正黑巧的滋味,可以用212F的沸水。

做意式濃縮咖啡,或者拿鐵咖啡,你將發現這支咖啡不容忽略的純正的黑巧克力滋味,口感厚而甜。
